Za'atar Feta Tomato & Mint Salad
Not all salads are created equal. This is the perfect refreshing combination of ingredients for a delicious summer salad. The bright colors are only elevated by the bright flavors of za’atar.

Ingredients: 4 medium heirloom tomatoes, 4 oz. Greek Feta, Z&Z Za’atar, 2 cups pita chips, 1 tsp honey, 2 tsp Kosher Salt, 1 lemon, 1 garlic clove, 6 Tbsp. extra-virgin olive oil, ½ cup mint leaves
- Recipe: - Core the heirloom tomatoes, then cut into small wedges. Toss into a bowl and season with 1 tsp. Salt 
- Grate ½ tsp. lemon zest, grate 1 garlic clove and set both aside. 
- Heat 6 Tbsp. extra-virgin olive oil in a small saucepan for about 2 minutes and add 2 Tbsp. za’atar. Stir for another 2 minutes then stir in reserved lemon zest and garlic. Pull off the heat and transfer za’atar oil to a heatproof cup. 
- Place 2 cups of pita chips in a medium bowl. Pour 2 Tbsps. Of the za’atar oil over; and season with salt to taste. Mix well with a rubber spatula, aiming to coat chips without breaking them into too many pieces. 
- In a bowl, squeeze lemon juice from 1 lemon into a small bowl. Add 1 tsp. Honey and ½ tsp. Salt. Stir in the remainder of the za’atar oil, stirring constantly until it is well incorporated. Adjust to taste. 
- Slice 4 oz. feta into large cubes. Add to the bowl of reserved tomatoes. Tear ½ cup mint leaves and add to the bowl. Drizzle the dressing over the bowl and toss to gently combine. 
- Add pita chips to the bowl and fold gently to combine. Add more za’atar and olive oil because you can never have enough. 
- Spoon onto a serving plate and eat before the chips get soggy.
