The Hake Cheek is an absolutely divine piece of meat found just underneath the jaw of a hake. With just a single cheek per hake, each piece is delicately removed before being slow cooked and then packed in delicious Navarresian olive oil. The meat is incredibly rich and fatty and is an absolutely special treat that can be eaten straight from the tin. If desired, sprinkle lightly with flaky sea salt or squeeze some lemon over the tin before savoring each tiny cheek.
This is an incredibly unique conserva given how uncommon it is to harvest and prepare these delicate bites of heaven. Artesanos Alalunga use only the finest fish sourced from the local markets off the Bay of Biscay.
